Can I filter on custom fields?

Yes, you can filter on most types of custom fields. For example, if you create a "Platform" custom field on bug backlog items, you can filter on that field like this: 

If you want a custom field to not be available in filters, uncheck the "Include in filters" property in the popup dialog for the custom field.
